This dish combines crispy tater tots, fluffy eggs, savory bacon, and loads of cheese all baked into one irresistible casserole. It's an easy, crowd-pleasing recipe that you’ll want to make over and over again. And trust me, once your family gets a taste, it might become a new favorite in your home—just like it did in mine!
Why You'll Love This Casserole
I first created this recipe when I was experimenting with a breakfast version of my go-to dinner tater tot casserole, and it was an instant hit. My husband, Thomas, loved it so much that he ate it for breakfast, lunch, and even dinner for days! The flavors meld together so perfectly that every bite is a burst of cheesy, crispy, savory goodness.
For this recipe, I recommend using Cabot Seriously Sharp Cheddar Cheese, which adds a rich, tangy flavor to the casserole. But feel free to use your favorite cheese to make it your own!
Ingredients You'll Need:
- Frozen Tater Tots
- Eggs
- Milk
- Bacon (cooked and crumbled)
- Cabot Seriously Sharp Cheddar Cheese (or your favorite cheese)
- Salt and Pepper (to taste)
- Green Onions (optional, for garnish)
How to Make Breakfast Loaded Tater Tot Casserole
- Preheat the Oven
Begin by preheating your oven to 350°F. Grease a 9×13-inch baking dish with nonstick spray to prevent sticking. - Cook the Bacon
In a skillet, cook the bacon until it’s crispy. Once cooked, drain the excess grease and crumble the bacon into small pieces. Set it aside. - Whisk the Eggs and Milk
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined. This mixture will help hold all the ingredients together and create a rich, fluffy texture. - Assemble the Casserole
Spread an even layer of frozen tater tots in the bottom of the greased baking dish. Sprinkle the crumbled bacon over the tater tots. Next, pour the egg mixture evenly over the top, making sure all the tater tots are coated. Finally, sprinkle the shredded cheddar cheese on top. - Bake the Casserole
Place the casserole in the preheated oven and bake for about 35-40 minutes, or until the eggs are set and the cheese is bubbly and golden brown. If you like your tater tots extra crispy, broil the casserole for an additional 2-3 minutes at the end of baking. - Serve and Enjoy!
Once out of the oven, let the casserole cool for a few minutes before cutting it into squares. Garnish with chopped green onions if desired, then serve and enjoy the deliciousness!
Make-Ahead Instructions
One of the best things about this casserole is that you can make it ahead of time. Prepare everything the night before, cover the dish, and store it in the refrigerator. The next morning, just pop it in the oven and bake as directed. This makes it perfect for hosting brunch or serving breakfast for a crowd without the stress of morning prep!
Can You Freeze Breakfast Loaded Tater Tot Casserole?
Absolutely! This casserole freezes well, making it ideal for meal prepping. Once you've assembled the dish (but before baking), wrap it tightly in plastic wrap and then in aluminum foil. You can freeze it for up to three months.
When you're ready to enjoy it, thaw the casserole in the refrigerator overnight. Then bake it as usual the next morning. It’s a great option for those days when you need a quick, delicious meal without much fuss.
