If you haven’t yet experienced the magic of a breakfast casserole, now’s the perfect time to dive in—especially with colder weather and the holidays just around the corner! This Loaded Hashbrown Casserole is easy to make, packed with comforting breakfast favorites, and versatile enough to serve as a delicious side dish.

Whether you're feeding your family or hosting a gathering, this casserole brings all the comforting flavors of breakfast together in one dish. And the best part? You can customize it to your liking!

Why You'll Love This Loaded Hashbrown Casserole

The beauty of this casserole is its flexibility. Love bacon? Make it a bacon-loaded hashbrown bake. Prefer breakfast sausage? You can swap the bacon for sausage or even use both! You can also mix in your favorite cheeses and vegetables to make it your own. In this particular recipe, I left out the eggs, but you can easily pair this casserole with scrambled eggs, pancakes, or waffles—or even serve it as a side for dinner with chicken!

I’m such a fan of breakfast casseroles that I’ve developed several variations. So after trying this recipe, don’t forget to check out my Slow Cooker Breakfast Casserole and Bisquick Breakfast Casserole for more easy and delicious options!

Ingredients You'll Need

This recipe makes about six servings and takes just 10 minutes to prepare before it bakes to golden perfection in the oven. Here’s what you’ll need to make this savory Loaded Hashbrown Casserole:

  • Milk
  • Butter
  • Frozen Hash Browns
  • Salt
  • Pepper
  • Paprika
  • Dried Parsley
  • Garlic Powder
  • Cheddar Cheese
  • Bacon
  • Green Onions (optional, for garnish)

You can find the exact measurements in the recipe card at the bottom, but feel free to adjust the quantities based on your taste or the size of your crowd.

How to Make Loaded Hashbrown Casserole

  1. Preheat the Oven
Begin by preheating your oven to 400°F. Spray a 9×13 baking dish with nonstick cooking spray to ensure nothing sticks.
  2. Melt the Butter and Heat the Milk
In a small saucepan, heat the milk and butter over medium heat. Once the butter has melted, remove the pan from the heat and set it aside.
  3. Mix the Hashbrown Ingredients
In a large mixing bowl, combine the frozen hash browns, salt, pepper, paprika, dried parsley, garlic powder, 1 cup of shredded cheddar cheese, and most of the chopped bacon (save a handful of bacon for garnish). Stir the mixture until all the ingredients are well combined.
  4. Assemble the Casserole
Spread the hash brown mixture evenly into the prepared baking dish. Then, pour the heated milk and butter mixture evenly over the top.
  5. Bake the Casserole
Cover the dish with foil and bake for 35 minutes. After 35 minutes, remove the foil, sprinkle the remaining cheddar cheese over the top, and bake uncovered for another 10 minutes or until the cheese has melted and is golden brown.
  6. Garnish and Serve
Once out of the oven, sprinkle the reserved bacon and chopped green onions (if desired) on top for garnish. Serve warm and enjoy the cheesy, savory goodness!

Make-Ahead Tips

This casserole is a fantastic option for meal prep, holiday gatherings, or when you need to get ahead in the kitchen. You can prepare it up to three days in advance. Simply cover the casserole tightly and refrigerate until you're ready to bake. When it’s time to serve, take it out of the fridge, uncover, and bake as directed.

Can You Freeze Loaded Hashbrown Casserole?

Absolutely! If you want to prep this dish for later, it freezes beautifully. After assembling the casserole (but before baking), place it in an airtight, freezer-safe container. It will keep in the freezer for up to three months.

When you’re ready to bake, thaw it overnight in the refrigerator. Once thawed, remove the cover and bake as per the original instructions.

A Hearty, Customizable Favorite

Whether you're serving this as the star of a cozy weekend breakfast or as a side dish at dinner, this Loaded Hashbrown Casserole will quickly become a go-to recipe in your kitchen. With its cheesy, savory flavors and easy-to-customize ingredients, it’s a dish everyone will love—especially on those chilly mornings when you need something warm and comforting.
