Ingredients

Filling:
  • 2 packages Sister Schubert's Cinnamon Yeast Rolls {thawed or not thawed ... it doesn't matter}
  • 6 eggs, beaten
  • 2 c. half-and-half
  • 1 c. milk
  • 1/4 c. pure maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. ground cinnamon
  • 1/8 tsp. ground nutmeg
  • pinch salt
Topping:
  • 3/4 c. chopped pecans
  • 1/2 c. brown sugar
  • 1/4 c. cold butter, cut in small pieces
  • 1/2 tsp. ground cinnamon

Instructions

  1. Spray a 9x13" baking pan with non-stick cooking spray. Cut cinnamon rolls into approximately 1-inch pieces: while still in the foil pan, run a knife through the rolls, making slices about 1/2-inch apart; rotate pan and repeat making slices perpendicular to the first slices. Place cinnamon roll pieces in the prepared baking pan, breaking up any large pieces with your fingers.
  2. Warm the icing packets that come in the cinnamon roll packages in the microwave for about 8 to 10 seconds. Drizzle/drip icing over the top of the cut cinnamon roll pieces.
  3. Combine beaten eggs, half-and-half, milk, maple syrup, vanilla, 1 teaspoon cinnamon, nutmeg, and salt; whisk until well combined. Pour evenly over cinnamon roll pieces.
  4. Combine chopped pecans, brown sugar, 1/2 teaspoon cinnamon, and butter in a small bowl. Cut with a pastry cutter, two knives, or your fingers until mixture resembles coarse crumbs. Sprinkle evenly over the top of the cinnamon rolls.
  5. Cover and refrigerate overnight {or at least 4 hours}.
  6. Bake, uncovered, at 350 degrees for 50-60 minutes until golden brown and set in the center. Serve with maple syrup to drizzle over the top.
